Ingredients: For the Rice Crackers; 1 cup rice; 4 cups water; 7 1/2 sheets nori; 2 cloves black garlic; 1 1/2 tbsp Miso; For the Tuna Mix; 8 oz Tuna Diced; 1 Avocado Diced; 1 1/2 tbsp Spicy Mayo; 1 1/2 tsp Soy Sauce; A good sprinkle of furikake; 1 1/2 tbsp sliced scallions; Optional: garlic, ginger, togarashi, lime juice

A fusion food recipe for Tuna Nachos served on homemade rice crackers. The rice crackers take a bit of time to make but are worth the effort. The tuna mix can be adjusted to taste and the recipe includes an optional method for a more gourmet presentation.

Tuna Nachos with Rice Crackers

Cook the rice in the water until it's mush. Blend it up and add the other flavor bombs. You may need to add more water to the blender, that's okay, add as much as you need to get it to blend.

Spread it thin and dehydrate it. If you don't have a dehydrator just put your oven on low. The time will largely depend on heat and how much water actually made it into your goop.

Once dehydrated to a point that is still malleable, cut into chip shape and fry at 350 until they're cronchy.

Combine all ingredients in a bowl and adjust to taste. Optionally, crust tuna in sesame seeds, sear it, slice it and put single slices on each chip and finish with some avo, sauces, and garnishes.
