Ingredients: 1 onion; big handful garlic; 1 cup white wine; 2 cups beef stock or whatever stock you have; as much thyme as you like; salt and pepper; 1 chuck roast; Optional: tomato paste

Found this video unpublished on my computer and figured it should come out of hiding while I'm trying to get back into filming stuff.

Tiny sandwiches

Cook down the garlic and onions in the same pot.

Optional: Add a little tomato paste before adding the wine.

Add the roast back in, cover and throw it in the oven.

The quickest cook time is probably 350 for maybe 3 hours or so, if its not tender by then just keep cooking until it is.

If you want a slower cook time you can roast at 275 or in a slow cooker.

Straining the sauce will give you more classic of a sauce, I just blend it to really punch up the garlic and onion flavor.
