Potato Bread Kolache with Sausage

Boil the potatoes until tender, then peel and mash them.

Use the water from the boiled potatoes to activate the yeast with 5g of sugar. Add the remaining 65g of sugar once the yeast is foamy.

Combine the mashed potatoes, activated yeast, eggs, salt, softened butter, and bread flour to form the dough.

Divide the dough into balls weighing about 115g each.

Wrap each dough ball around a fully cooked smoked jalapeno and cheddar sausage.

Apply an egg wash to each wrapped sausage.
